The three within the name recounts a family legacy spanning\u003cstrong\u003ethree generations\u003c\/strong\u003e and the adventure of the \u003cstrong\u003ethree brothers\u003c\/strong\u003e who founded the current restaurant and animate it on a daily basis. \u003cstrong\u003eGiacomo\u003c\/strong\u003e is dedicated to the wine cellar and dining, \u003cstrong\u003ePepe\u003c\/strong\u003e is the chef while \u003cstrong\u003eCamillo,\u003c\/strong\u003e also a chef, after years at the stove, he gave up the baton to take close care of the Bottega and its preserves. \u003cbr\u003eThis workshop was created with the aim of making some of Ostreria's workhorses \"removable\" so as to transform the restaurant's excitement into pantry products that can be enjoyed at any time. This extension of the gastronomic experience cannot disregard the philosophical cornerstones chosen by the Pavesi brothers: \u003cstrong\u003egenuine passion\u003c\/strong\u003e for \u003cstrong\u003egastronomy\u003c\/strong\u003e and the school of Italian catering, study and culinary technique applied to the design and creation of dishes, respect for the territory and a sense of belonging to its agricultural expressions, anthropological and artisanal. \u003cbr\u003eIn Bottega, it was decided to continue to be cooks by concretizing in a pantry product the \u003cstrong\u003estories of land\u003c\/strong\u003e, of \u003cstrong\u003etraditions\u003c\/strong\u003e and \u003cstrong\u003epeople,\u003c\/strong\u003e told through gestures and manual processing. The selection of raw materials draws on the chefs, professional experience gained in great international kitchens, and knowledge of Piacenza's excellence.
